  • Our understanding of the regulation of fatty acids in milk is weak such that consistent alterations in milk fat toward a more healthy mixture of fatty acids for the human consumer are not available. The purpose is to find ways to consistently alter milk fatty acids through an understanding of an enzyme that provides more unsaturation in fatty acids so that new "designed" dairy products can be marketed.
