Modifying Milk Fat Composition for Enhanced Manufacturing Qualities and Consumer Acceptability
High fat dairy products are considered to be bad for human health mostly based on the abundance of saturated fatty acids. Milk can be designed to have an altered fatty acid profile that will be beneficial to human health. The purpose of this project is to produce a milk fat that has been enriched with conjugated linoleic acid, a fatty acid shown to be an important anticarcinogen. Efforts will modify bovine milk, process it into dairy foods, and determine effects in rat cancer models and in humans.
