abstract

  • While quality is a relative term that varies according to end-use, it will be necessary to identify critical factors that dictate "quality" for specific product applications of agricultural commodities, and to provide means for defining, gauging, and predicting "quality" and end-use of raw commodities such as wheat and potatoes. Proposed research is intended to investigate the role of starch as it relates to wheat and potato quality/end-use to foster the competitiveness of Idaho agricultural commodities in both existing and emerging markets.
