Modifying Milk Fat Composition for Improved Nutritional and Market Value
Milk fat provides fatty acids that have been shown to have beneficial and adverse effects on human health. Regulation of specific fatty acids in milk is poorly understood. An enzyme called delta-9 desaturase is vital to synthesis of milk fat but its regulation and activity needs further examination. The project examines the metabolism of fatty acids in the lactating cow. The purpose is to improve our understanding of the delta-9 desaturase enzyme in order to improve the quality of milk fat. Data will be used to generate a physiological model of fatty acid metabolism in the lactating cow.
